Spicy Summer Gazpacho

During Summer I enjoy dishes which don’t require slaving over a hot stove. Gazpacho is refreshing, nutritious, and easy to prepare. But just because the soup is served chilled doesn’t mean it can’t have a little heat.

Ingredients:

2 cucumbers peeled, seeded, diced

3/4 medium red onion diced

2 cloves garlic minced

4 cups vegetable juice

1/4 cup red wine vinegar

1/4 cup extra virgin olive oil

4 Roma tomatoes diced

Kosher salt and fresh ground black pepper to taste

1 tsp celery salt

1 Table spoon RESTLESS REAPER hot sauce

Basil for garnish

Instructions:

Mix all ingredients in glass (or other non-reactive material) container. Puree 1/2 of the mix and add back to the container. Stir. Cover and chill the gazpacho in the refrigerator for an hour. Enjoy!
